MARYLAND CRAB CAKES

INGREDIENTS:
1 pound backfin crab meat
1 cup bread crumbs
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup mayonnaise
1 teaspoon dry mustard
1-2 teaspoon worcestershire sauce
1-2 teaspoon Old Bay seafood seasoning (can substitute another brand but try for Old Bay)

NOTE: Backfin is the best crabmeat, the recipe suffers if another grade is used.

DIRECTIONS:
Remove any cartilage from crab meat. In a bowl mix crumbs, egg, mayonnaise, and seasonings. Add crab meat and mix gently, try not to break the lumps. If the mixture is too dry add a little more mayo. Shape into 6 or 8 cakes and cook in a frying pan with just enough shortening to prevent sticking. Alternately, they may be deep fried at 350 degrees or cooked under the broiler.
