RICH CREAM CHEESECAKE

PREPARATION TIME: 20 minutes

BAKING TIME: 1 1/2 hours

OVEN TEMPERATURE: 300F degrees

INGREDIENTS:

CRUST:
2 cups crushed graham crackers
1 teaspoon cinnamon 1/4 teaspoon nutmeg
2 1/2 tablespoon sugar
2/3 cup (165ml) melted butter

FILLING:
1 1/2 pound (750g) cream cheese
1 cup sugar
2 tablespoons plain flour
1/6 teaspoons salt
5 eggs, separated
1 egg
1 1/2 cups sour cream
4 tablespoons lemon juice
1/4 cup sugar
cinnamon

DIRECTIONS:
1. Mix together graham crackers, cinnamon, nutmeg, sugar and melted butter. Firmly press on bottom and sides of pan. Chill until ready to use.
2. Soften cream cheese and beat in the cup of sugar.
3. Add the flour and salt, mix well.
4. Beat in egg yolks, plus the whole egg. Add sour cream and lemon juice.
5. Beat the egg whites to soft peaks; add sugar; beat until stiff.
6. Pour into prepared crust. Bake; turn off heat, letting cake cool in the oven. Chill in the refrigerator.

Serve sprinkled with cinnamon.

NOTE: Baking this over a can of water avoids cracking and drips in the oven.
