POTATOE PANCAKES

PREPARATION TIME:
30 minutes

STOVE TEMPERATURE:
High until oil is hot, then turn to medium to cook pancakes.

SERVES:
2 or 3

INGREDIENTS:
2 large or 3 medium potatoes
1/2 teaspoon salt
2 eggs
1 heaping tablespoon flour
1/2 small onion
Crisco Oil

DIRECTIONS:
Peel and grate potatoes and onion.
Beat egg and add salt.
Add flour the the egg mixture until you have a smooth batter.
Heat oil in a frying pan until hot. Spoon batter into hot oil and spread each one out, so that your pancake will be thin.
Fry until golden brown on each side.
Place on paper towel to drain.
Serve pancakes with cold applesauce.
