GERMAN POTATOE SALAD

PREPARATION TIME: 45 minutes

INGREDIENTS:
4 or 5 potatoes, sliced
1 or 2 tablespoons flour
8 slices bacon, diced
1 onion, diced
1/4 cup vinegar in 1 cup water
salt and pepper

DIRECTIONS:
Cook bacon.
To bacon grease, add flour. Do not brown.
Add vinegar and water. Cook until thick.
Add diced bacon, onion, salt and pepper to the cooked potatoes.
Mix well.
Serve with smoked sausage.

MEMORIES/STORIES ASSOCIATED WITH THIS RECIPE:
This recipe is my son's (Ron Leeseberg) favorite dish. The recipe was given to me by my husband's sister. She was an excellent cook. She passed away at the age of 97. This dish was served on Saturday evenings from 1937 till 1999. I expect to continue making it.
